Chocolate Coffee Muffins

Recipe adapted from Tasty Kitchen.


INGREDIENTS:

2 packages Starbucks instant coffee (1 package = 26.6 grams)

1/2 cup warm milk
1/4 cup butter, melted
1 egg
1 teaspoon vanilla

4 3/4 ounces (~1 cup) all-purpose flour
2 1/3 ounces (~1/3 cup) sugar
1 1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt

1/3 cup chocolate chips

DIRECTIONS:

Preheat oven to 375° F.

Add instant coffee to warm milk and stir until dissolved.  Add melted butter, egg, and vanilla and stir.  In another bowl, sift flour, sugar, baking powder, cinnamon, and salt.  Add dry ingredients to wet, and stir until combined.  Lastly, fold in chocolate chips.

Equally fill 12 muffin tins with batter, and bake for 17-20 minutes, or until a toothpick comes out clean.
